The obvious next step for you is Men at Arms, which is one of my all-time favorite Discworld books, and one of the ones that made me laugh the hardest out of the group. It's another Vimes book, but with bonus Sergeant Angua, a much improved Carrot, and best of all, Sergeant Detritus, the first troll in the Watch.
